an engineer for matt kenseth and when reiser got suspended for 4 races a few years ago, this guy became crew chief. they talked about his background and being a clemson grad. not sure about rest, most are behind the scenes guys in the shop that you wouldn't hear about on tv or radio, i would think.

...and I would say that Clemson has the 2nd most engineers in the sport behind UNC-Charlotte. Just a few that I can think of are...
Mike Nelson, VP Operations of Penske Racing
Todd Gordon, Crew Chief of Various Teams
Manuel Daskalos, Computer Simulations (also helped to develop the Nascar Racing 2003 sim game from Papyrus)
The founder/owners of AeroDyn wind tunnel in Mooresville, NC are also Clemson grads.
Most of the Clemson engineers in NASCAR were undergrad/grad students during the mid-90's when the ME department did a lot of research for Roush Racing and Ford. That was when we actually had a sort of "motorsports program", and had the Clemson car run at the Winston race in Charlotte. Now the "motorsports engineering" deal is more of an "idea" that gains the attention of students, but there are no real undergrad classes currently offered by Clemson with a motorsports emphasis.
CU-ICAR also tries to appeal to the motorsports enthusiasts, although it currently has more of a manufacturing/systems integration focus.
