some red onions this afternoon. Any pro tips will be appreciated.

Vinegar is in the recipe so I think I'll go Balsamic.

here's the recipe I use

2 med or 1 large red onion, halved and sliced thin
a sprinkle of red pepper flakes
1 C apple cider vinegar
1/2 C lime juice
2 T sugar
1 T kosher salt

bring all ingredients except onions to a boil, pour over onions in a container sized so onions are covered (I use 1 large onion in a pyrex 2 cup measuring cup). let sit till all is pink.
