Easter dinner: Ham or Prime Rib?

We are hosting about 12 for Dinner after church on Easter. I'm trying to decide between Prime Rib or Ham. We normally have ham, but it's basically a replacement-level protein.

Any great ham recipes or other thoughts? What are yall cooking for Easter?

Normally folks will scatter when 37 of us show up.

We'll have camping chairs and a portable grill for back up.

Main activities: Football (non gringo), grill, cervesas, fishing.

I was a member there in the late 90's early 2000's. Shot my career low round in 2003 on that course (-1, 71)

Slip out on the course whilst your there. And tell Joe Jackson I said hello.

Prime rib also sorta sucks. At least for the price it does IMO.

Around Easter, Publix puts it on steep sale.***

one from publix, about $7/lb IIRC. Had them cut it up into steaks. SOUNDS GOOD RIGHT? It was MEH at most.

When doing it prime rib style, 4 people per bone is plenty enough in my experience, especially if you are doing sides, salad, dessert, etc.

I would bet out of 12 people, there will be a few that do not want to

eat beef that is not well done and I refuse to cook beef well done, so it would be ham for me.

Buy a ham and smoke it. It is amazing.

If you really like all of these people enough, do prime rib.

If not, some boring old ham will do.

I don't know why I'm totally good with a ham sandwich but if I see one of them whole spiral deals at a holiday meal I'm immediately turned off.
