Well dang. Gonna rest a few min while I cook a steak. Should I skip this bottle and open a different one?

You did very well. Saint Cosme is a very good and well respected wine producer based in the southern Rhone. I’ve had that CdR, their Chateauneuf du Pape, Gigondas, and Cote Rotie, and they’re all nice.

Côtes du Rhône is going to be a great entry into Rhone wines at a reasonable price point for good everyday drinker wines. If you like that one, which is a 100% syrah, look for some of the more refined expressions of that grape that was born in the Northern Rhone like Cote Rotie, Hermitage, Crozes Hermitage, or St Joseph. I personally am a HUGE Rhone syrah fan, my favorite AOC is Cote Rotie. These are going to be spendier, but will be more complex and show-stopping.

Some wines are better with age, but a Côtes du Rhône is going to be made to open and enjoy right away. In fact most wines these days I would say are meant to be enjoyed young, especially if they aren’t properly stored.

I wouldn’t sit on that Côtes du Rhône, that’s not really the type of wine that is made to age or benefit from bottle aging
