Thats interesting, never heard of that method. I have a couple different smokers but have always had the cheap ole Brinkman dome top around for 25yrs and it has always done great. I also have an Oklahoma Joe's Smoker that I really like.

I will have a both running next weekend as I smoke 10 Alaskan Copper River Red salmon filets I got earlier this year.

My advice for butt smokers, unless you’re in a time crunch don’t wrap it. The flavor and bark is sacrificed. An 8 pound butt usually takes me about 18 hours but it’s worth it to me.

A buddy smoked a butt in about six hours. He sliced it up, and it was nowhere near ready to be called barbecue.
