Hey, speaking of UDP-fabulous, I now own an Instapot

Jul 11, 2019, 3:25 PM

Wife wanted it...don't ask, but it does feel good to now own the middle class must have object of desire, circa 2016.

Question though---what do you do with it?

I just threw some shiddy pork chops in there when it was delivered and man it cooked them fast. They were the worst pork chops I've ever tasted, but they were hella quick.

Other than that I've been making the knock-off Starbucks sous vide egg bites. They're $5 for two from Starbucks, and I'd order them about twice a month normally, so in 8 months this baby will be pure profit.

Avoid the end of the year rush.

But with the change in charity deductions, might be just easier to put by the curb.

I do balled peanutz in it and they come out great. It can do dried beans in like 45 minutes without soaking. I'm not one of these insane people that tries to cook an entire meal in it, sauteing and ####. F that noise. But any soups, stews etc work great and it seriously cuts the time. Also, anything that you would normally do in a slowcooker can be done in it as a slow cooker of you can speed it up with the pressure function.

Oh, it also pickles stuff great.

Re: please to send boiled peanut technique as soon as possible

Jul 11, 2019, 3:44 PM

If you're starting with green peanuts, just wash em, throw em in with your desired seasoning/jalapenos/salt whatever you want. However mush seasoning you think you should put in, double it. You'll need to put something on top of them in the pot to keep them from floating, i use one of those swirly spiral old school steamer things. Cook on high pressure for 75 minutes with a natural release (lol), this is IP lingo for letting the pressure decrease on its own instead of immediately releasing the pressure valve. If you like em softer you can increase cook time to suit.

If you have to use raw peanuts you'll need to soak overnight at least and will probably have to increase the cook time as well but you should be able to find green peanuts now. They freeze well in the juice for your winter balled peanut enjoyment as well.

Wallyworld. She makes them wit beer and spices and such, not as strongly flavored different from roadside SC as you might think, but are very good. Oh, and she does in slow cooker, but InstaPot would be fine.

that is awesome. Recipe came out of a paleo book, I'm sure recipe is on interwebs somewhere. Gotta use Red Boat Fish sauce, though, cuz other fish sauces are the suxxors in comparison.

I left a dozen or so mud minnows in a bait bucket Monday sitting in my livewell. I figure its been 90 degrees plus for 3 days, so the stew should be coming right along.

I'll prob go out to the boat Sat or Sun and i'll be glad to send you whats cooking if you like.

it was 80% off clearance discount at Kohls I think. $19.95 for a $96 gizmo, I figured what the hey.

I threw a pork shoulder in and it did it up some pulled pork pretty righteous. Not much different than a crock pot though really. I eat as much rice as a midsize Chinese family so I'm sure I'll get around to doing that soon. Hard for me to kitchen cook in the summer when it doesn't get dark until 9pm, so this is a few months from routine use for me.

I do wanna try some boiled peanuts when I find a decent batch.

Made pork chops last night with a glaze made from dijon mustard, apricot jam, lemon juice, and butter that was awesome (not in instapot).

Jul 11, 2019, 4:18 PM

What I do want is a discada cooker for outdoors. If you're not familiar, it sort of a griddle-meets-wok contraption. Firedisc seems to be the one dominating online ads these days, but you can get them cheaper.

Some gravy or sauce mixture in the crock 8 hrs. and good to go.

I've never tried Bagel Bites in the crock. ;)

absolutely correct. I couldn't tell you the last time I had a porkchop. I don't buy them, I certainly don't order them at restaurants, and I don't know anybody else who buys/makes/serves them. It's a tough, mostly pointless cut of meat from an otherwise excellent animal.

Jul 11, 2019, 5:42 PM [ in reply to To be fair, even the best pork chops are usually pretty bad ]

are excellent. High heat, short cook time gets browned exterior and still moist and tender inside. Took me a while to learn this, and got advice here, but they're excellent. Find basic brine recipes online, couple hours is fine for a thick-cut chop.
