grille in the not too distant future. Just waiting for the supplies I ordered off the Bezoszon to arrive before I go out and buy my first butt to ruin. The Grillemasters say that as long as you cook it low and slow, even an armature can get great results. I will shirley test that statement!

I have a Weber as well and have no need for a designated smoker so it will have to do. If you figure it out send me some directions and good luck…

I’m in Lot 3A and that group that tailgates with 5-6 tents on the corner of 93 and Perimeter are smoking something at every tailgate. I need to walk on over there and see if I can learn something.

4 keys i've learned

find a good source of meat. some of these butts sit on the grocery store shelves forever. Find a good place and stick to it. The restaurant depot on butler rd has some good meat.

thermometers x 2. 1 in the butt.. one inside the grill.. monitor both temperatures.

Texas Crutch. When the meet hits around 150 .. i pull it out and wrap in in foil for the rest of the way. I cook mine until the 195-203 range.

LET IT SIT LET IT SIT LET IT SIT ....... when it gets to the temp you want.. pull it out.. wrap it up. put it in a cooler and let it sit for at least 45 mins.. i go an hour.



experiment with your rub.. Brown sugar and seasoning salt are staples.. after that use whatever spice/seasoning you want.

always assume it will take longer than you think. IF you do get in a rush .. you can finish it off in the oven once the bark is on.

You want to keep the meat hot while the juices in the butt redistribute throughout the roast. This makes the meat extra moist.

I was a novice. Had never tried to smoke a butt before. It turned out perfectly. I don’t see how one could ruin a butt that is cooked low and slow.

Go for it. Why not smoke one for this weekend’s game? Just remember it takes time to properly smoke a Boston Butt. It took me a full day to brine and rub mine. My roast was just under 6 pounds and it took me 11 hours start to finish to cook it. That included letting it rest for 2 hours after cooking.

Boston butt…….

My Boston Butt turned out wonderfully. Tender, juicy and full of pork flavor. My wife and I used Carolina Gold BBQ sauce at the dinner table.
There are just the two of us and that 5 pound roast will feed us about 6 times.

If you have the equipment needed to smoke a Boston Butt but have never tried to cook one, please do. You will not be sorry. And you will never want to go out to a BBQ restaurant again. I sure don’t.

Thanks to all who offered me advice. I used a lot of your suggestion. I couldn’t have done it without you.

Congrats! Hard to screw up a butt, they are pretty forgiving

Try some whole chickens and ribs, they don't take nearly as long and are just as good. Spatchcock (google it if you don't know it) the chicken.

When you get brave and more experienced move on up to a brisket, don't want to screw that one up though as you're looking at $70+ for a quality whole brisket. Keep us posted on your next ventures.

Have already smoked 2 spatchcock chickens and a rack of baby backs. They all came out great. A brisket is definitely in my future.
