Brought back some ceviche that was awesome on chips.
I don't know how they bypass DHEC, and they probably don't, but the ceviche tastes almost like the real deal. Only thing is it's mostly shrimp. No scallops or fish, or calamari in it.

I got some sort of bacterial enteritis last summer from eating shrimp and snow peas from a strip mall Chinese restaurant in Murrells Inlet. The explosive watery thundershits lasted 6 weeks and I lost I think 15 pounds, about 10% of my body weight. It was crazy.

They marinate the seafood in lime juice for like 3 days

It is never cooked although the lime juice cooks the shrimp pink and firm like over heat. Basically it's lime juice and cilantro. In the US they cook the seafood then marinate it in lime juice. Not the same taste.
I've probably eaten ceviche 50+ times or more in Mexico and never had an issue. This comes from someone who has never had a stomach bug so maybe results vary. And this place probably cooks it I assume, but it sure tastes like the real deal.
