That looks really really good. I know this might be controversial, but I actually don’t like the egg in the Mac, strongly prefer those without. I feel like the egg just makes it bready where is doesn’t want or need to be.

Pro tip: add a cup of starchy pasta water.

Scoop some out and set it aside right before you strain the elbows. Add it to your sauce and it'll help the cheesy goodness cling to the pasta.
